ZEYBEK is an optical sorting machine developed for table and oil olive processing facilities. Product passing through the LED-lit imaging tunnel is captured by two industrial colour cameras; a deep-learning model running on a Linux-based industrial platform classifies each olive, and defective ones are directed to the reject outlet by a pneumatic ejector valve group with 20 independent channels. The model is trained for the olive varieties processed by your facility and can be updated on site.
How it works
Four steps from feeding to the reject outlet.
- 01
Feeding and spreading
The product is spread through the camera's field of view in a single layer at a constant speed. The spreading pattern directly determines capacity and accuracy.
- 02
Imaging
Two industrial colour cameras capture each olive in the LED-lit tunnel. The camera enclosures have an IP54 protection rating.
- 03
Classification
A deep-learning model running on a Linux-based industrial processor classifies each olive as accepted or defective according to the trained profile.
- 04
Separation
A fast-response pneumatic ejector valve group with 20 independent channels directs defective olives to the reject outlet. Accepted product continues along the line.
Detected defects
Defect classes verified as part of the acceptance test. Profiles for new varieties can be trained on site.

Product profile trainable on site
The machine is controlled via a PLC and 15-inch touch operator panel. The recipe system allows you to create new recipes and train AI profiles for new olive varieties on site. The profile-training method is explained in detail during commissioning. Sensitivity settings, production statistics (processed quantity and reject rate) and fault displays are monitored from the same screen.
For profiles you create, performance is valid provided that training is carried out using the specified method and representative samples.
Remote support
When an internet connection is available, fault diagnostics and software updates can be performed through secure remote access. Remote support is free during the warranty period.
Warranty
The machine is warranted for 1 year from the commissioning date against manufacturing and assembly defects, excluding wear parts. Damage resulting from operating errors, electrical fluctuations or grounding faults is excluded from the warranty.

What determines capacity?
The stated capacity is the minimum value. Actual capacity depends on the product's calibre and variety and on how evenly the feeding arrangement spreads it in a single layer. Small calibre and irregular feeding reduce capacity.
What do I need to do for a new olive variety?
You create a new profile through the recipe system on the operator panel and perform the AI training on site yourself. The method is explained in detail during commissioning.
How is the accuracy rate verified?
Before shipment, a factory acceptance test (FAT) is performed at our facility with your participation. The sample composition and measurement method are defined in the acceptance test protocol.
Are the feed and outlet conveyors included?
No. The machine includes only the optical sorting unit. The feed hopper and accepted-product and reject outlet belts are quoted separately; we can also manufacture them on request.
How long does installation take?
Our field team's work is planned as 2 days of commissioning and 2 days of training, provided that the floor, electrical and compressed-air infrastructure is ready.
What happens in the event of a fault?
When an internet connection is available, fault diagnostics and software updates can be performed remotely. Remote support is free during the warranty period; on-site intervention is provided when required.
